Le bambou est aim\u00e9 pour multiples possibilit\u00e9s d&#8217;utilisation, de ses qualit\u00e9s \u00e9cologiques, de son accessibilit\u00e9 et de ses vertus.<\/p>\n<p>&nbsp;<\/p>\n<p>On conna\u00eet le bambou pour son usage industriel (fabrication de meubles, mat\u00e9riaux de construction, tissu, etc.) ou comme plante d\u00e9corative pour notre chez-soi. Mais saviez-vous qu&#8217;on peut la retrouver dans notre assiette? En effet, les pousses de bambou sont des aliments riches en nutriments, cuisin\u00e9es depuis des milliers d&#8217;ann\u00e9es par les asiatiques.<\/p>\n<p>&nbsp;<\/p>\n<h4><strong>Les pousses de bambou<\/strong><\/h4>\n<p>En plus d&#8217;\u00eatre d\u00e9licieuses, les jeunes pousses de bambou sont excellentes pour la sant\u00e9. Selon l&#8217;\u00e9tude de <em>Nirmala et al.<\/em> (Universit\u00e9 de Panjab en Inde), les jeunes pousses sont <strong>riches en prot\u00e9ines, glucides, fibres et ont une faible teneur en mati\u00e8res grasses. <\/strong>Elles sont une <strong>bonne source de vitamines, d&#8217;acides amin\u00e9s, de min\u00e9raux <\/strong>(potassium, phosphore, magn\u00e9sium, calcium, fer, etc.). Gr\u00e2ce \u00e0 sa haute teneur en nutriments, les pousses de bambou gagnent rapidement en popularit\u00e9.<\/p>\n<p>&nbsp;<\/p>\n<p>Une \u00e9tude plus r\u00e9cente (<em>Park et al., 2009<\/em>) a \u00e9galement conclu que les jeunes pousses de bambou utilis\u00e9es comme source de fibres alimentaires ont des effets b\u00e9n\u00e9fiques sur le profil lipidique et les fonctions intestinales. En effet, le <strong>cholest\u00e9rol sanguin \u00e9tait r\u00e9duit<\/strong> chez les consommateurs de pousses de bambou et la <strong>r\u00e9gulation intestinale am\u00e9lior\u00e9e<\/strong> de fa\u00e7on significative.<\/p>\n<p>&nbsp;<\/p>\n<h4><strong>Cuisiner les pousses<\/strong><\/h4>\n<p>Les occidentaux int\u00e8grent peu \u00e0 peu ce nouvel ingr\u00e9dient dans leur cuisine, d\u00e9couvrant de nouvelles saveurs et une fa\u00e7on originale de pr\u00e9parer leurs mets pr\u00e9f\u00e9r\u00e9s. On utilise les pousses de bambou dans les salades, dans les soupes, dans les saut\u00e9s de l\u00e9gumes ou de viande et en l\u00e9gume d&#8217;accompagnement. Au Japon, les pousses sont indispensables pour pr\u00e9parer le sukiyaki. Bouillies au moins 30 minutes, elles sont l\u00e9g\u00e8rement croquantes et croustillantes. On reconna\u00eet leur excellente qualit\u00e9 lorsqu\u2019elles ne sont pas fibreuses. Dans les pays occidentaux, on les retrouve surtout s\u00e9ch\u00e9es ou en conserve.
